Grapefruits are so delicious now, they taste like candy! Today, I'm showing you how to use them in a rice dish, as well as a Sangria! 


(For both of these recipes that call for grapefruit, if you take a medication that won't allow you to eat grapefruit, you can substitute with oranges!)


  • 2 cups water
  • the juice of half a grapefruit
  • 2 cups instant rice
  • the segments from the other half of the grapefruit (save grapefruit and hollow out to use as bowls for rice)
  • 1 lime, juiced
  • 2 Tablespoons fresh mint, chopped


In a pot, bring 2 cups of water and the juice from half a grapefruit to a boil. Add the rice to the pot. Cover and remove from the heat. When the rice is cooked, (about 5 minutes), add the grapefruit segments and freshly squeezed lime juice. Stir well and top with freshly chopped mint. Serve in hollowed out grapefruit, if desired.
